Sweet Corn, Zucchini & Lemon Pasta

Prep time: 10 minutes | Cook time: 15 minutes | Servings: 4

Ingredients

• 8 oz short pasta (such as gemelli, rigatoni, or fusilli)

• 2 ears fresh sweet corn, kernels cut off the cob (hold onto the cobs!)

• 1 medium zucchini, sliced into half-moons

• 2 tbsp olive oil

• 2 cloves garlic, minced

• 1 small shallot, finely chopped

• 1 lemon (zested and juiced)

• 1/2 cup grated Parmesan cheese (plus extra for serving)

• 1/2 cup fresh basil leaves, torn

• 2 tbsp butter

• Salt and red pepper flakes to taste

Instructions

1. Boil Pasta & Extract Corn Milk:

Bring a large pot of salted water to a boil. Add the pasta. While it cooks, run the dull back of your knife down the stripped corn cobs directly over a small bowl to scrape out all the creamy “corn milk.” Set aside.

2. Sauté the Veggies: Reserve 1 cup of pasta water before draining!.

Heat olive oil in a large skillet over medium heat. Add the shallot, zucchini, and a pinch of salt. Cook for 3-4 minutes until softened. Stir in the garlic, corn kernels, and a pinch of red pepper flakes, cooking for another 2 minutes.

3. Build the Sauce:

Add the cooked pasta directly into the skillet with the veggies. Pour in the scraped corn milk, butter, lemon juice, lemon zest, and 1/4 cup of the reserved pasta water. Toss vigorously to melt the butter.

4. Emulsify & Finish:

Remove from heat and stir in the Parmesan cheese. Toss continuously, adding a splash more pasta water if needed, until a silky, glossy sauce coats every piece of pasta. Fold in the fresh basil and serve immediately with extra Parmesan.

The Master Lightning Bug Catcher

There is nothing quite like a warm summer evening in Maryland, especially when Jax is on duty!

Lately, our resident “Chief Fun Officer” has perfected his late-summer hobby: catching fireflies as they float across the backyard at dusk. Unlike most dogs who just chase them, Jax is surprisingly, successful at it. He gently nabs them right out of the air, and then stands there shaking his head in total bewilderment as they light up and buzz around inside his mouth!

It’s hilarious to watch, and a sweet reminder that the best part of finding the right home isn’t just the square footage, it’s having a backyard to make memories in, whether that’s hosting family BBQs or watching your four-legged family members put on a twilight show.
